10 beginner-friendly vegetables and herbs

Whether you are a beginner or just want to make gardening a bit easier, these 10 vegetables and herbs are a fantastic place to start. They don't require much, but deliver plenty of flavor and beauty.

Here are our favorites – and why they are so easy:
🥕 Carrots
Plant them in loose soil and be mindful of watering – they will take care of the rest themselves. They taste best when left to grow in peace.
🌿 Chives
One of the most rewarding herbs. They come back year after year and require almost no care. Perfect on eggs, potatoes, and in salads.
🧅 Onions
Plant onion sets in early spring, and you basically just have to wait. Onions take good care of themselves and keep well in the kitchen.
🌱 Peas
They grow quickly, need just a little support, and reward you with sweet, crunchy pods – fun for kids to harvest too!
🥔 Potatoes
Plant them in buckets, planter boxes, or straight in the ground. They are easy to grow, and harvesting them is always like a little treasure hunt.
🌶 Radishes
One of the fastest vegetables – ready to harvest in just 3–4 weeks! Perfect for the impatient gardener.
🌸 Thyme
An aromatic and hardy herb that thrives in both pots and garden beds. Requires minimal watering and plenty of sun.
🌿 Parsley
A biennial plant that is a bit slow to germinate, but in return provides aroma and flavor all season long – and then some.
🥗 Lettuce
Cut-and-come-again lettuces are ideal in planter boxes. They grow fast and can be sown again and again all summer long.
🍃 Spinach
Tolerates partial shade and cooler temperatures – making it perfect for the Danish spring. Harvest often, and it will keep on growing.

Tip: Make the most of your kitchen garden with our Danish-made corten steel planter boxes – beautiful, durable, and designed to stay outside all year round.
